Highland Park "The Dark" was designed to celebrate the autumn and winter seasons on Orkney - a time of intense weather, short days, and long, dark nights.

It opens with intense aromas of dried fruits (raisins, dates, and sultanas), followed by toasted cinnamon sticks, nutmeg, and dark muscovado sugar. Beneath the spice is a foundation of damp earth, old leather, and a very gentle, integrated whisper of heathery Orkney peat smoke.

The finish lingers with notes of roasted coffee beans, toasted almonds, dried orange peel, and a final, subtle ash-forward smoke.
