High Spirits is a highly respected boutique Italian independent bottler founded by Nadi Fiori in Rimini. Renowned for selecting casks that display extreme elegance rather than raw power, Fiori launched the highly aesthetic "Lochs & Castles of Scotland" series to marry elite single-cask Scotch with watercolor-style landscape portraits highlighting Scotland's historic geography. 

It opens with an initial hit of antique furniture wax, salted honey, and line-dried maritime linen. As it sits, it reveals complex notes of overripe yellow plums, green apple skins, lemon curd, and a distinct, breezy sea-salt air. It leaves a trailing, elegant footprint of dry European oak wood tannins, coastal salinity, and a highly pleasant, lingering glaze of waxy citrus oils.
